Trailer-park cuisine at its FINEST and damn is it good! I serve this on game night and its always a big hit. 100% munchies approved!
1 bag (13 oz.) Nacho Cheese Doritos
3 cups cooked chicken, torn (I use a rotisserie chicken from grocery)
1 envelope (1.75 oz.) Taco Seasoning
2 cans cream of chicken soup, undiluted
1 can Rotel diced tomatoes and green chilies
1 can (16 oz.) pinto beans
1 cup chunky salsa
8 oz. sour cream
2 cups shredded cheddar cheese
1. Preheat oven to 350°F (175°C). Grease a 9 x 13 inch casserole pan. Crush entire bag of Doritos and cover the bottom of the pan.
2. Reserve 1 cup of the cheese (for topping). In a large bowl mix the cooked chicken and taco seasoning; toss. In same bowl mix remaining ingredients (remembering to keep back 1 cup of the cheese). Pour mixture over crushed Doritos.
3. Bake 20 minutes. Top casserole with remaining 1 cup of cheese and bake an additional 5 minutes or until cheese topping melts.
4. Serve with additional sour cream and salsa.
If you use a rotisserie chicken, you know the ones they sell at the checkout lines at the grocery store, you’ll not only save on preparation time but you will also have the remaining chicken left to make chicken soup. Such as Carol’s Easy Chicken Vegetable Soup.
