A great alternative to the standard garden salad.  This chunky vegetable delight is sure to enjoy when topped with the Tangy Tomato Dressing recipe that follows.

1 bag (10 oz.) of your favorite mixed salad greens
1 med. yellow summer squash OR zucchini, halved lengthwise and sliced 1/4-inch thick
2 med. carrots or 1 small jicama, cut into 1 1/2 x 1/2-inch sticks.
1 cup red and/or yellow cherry tomatoes halved
1 cup sm. whole fresh mushrooms
1 cup sliced cauliflower OR broccoli flowerets

1. Prepare Tangy Tomato Dressing (below). Cover and refrigerate while preparing the salad.

2. In a large salad bowl, combine the greens, squash, carrots, tomatoes, mushrooms and cauliflower. Shake the dressing well; pour over salad. Toss lightly to coat.

The perfect salad dressing for the Hostess Salad Bowl (above) or any salad.  This dressing is super yummy!

 
1/4 cup catsup
2 Tbs. grated red onion (how to)
2 Tbs. olive OR vegetable oil
2 Tbs. lemon juice OR vinegar
2 Tbs. water
1 tsp. prepared horseradish, drained
1/2 tsp. sugar
1/2 tsp. Worcestershire sauce
1/2 tsp. black pepper

1. In a tight jar combine all ingredients.

2. Cover and shake well, then refrigerate (will keep for 1 week).

I enjoy making this salad to accompany my Sunday Spaghetti Supper. The Tangy Tomato Dressing is good on any kind of salad!
