Eastern Shore Oven Fried ChickenEstimated Cost:  $12.50

I combined a family recipe for Eastern Shore Fried Chicken with a Food Network recipe for Oven Baked Chicken and came up with something special.


1 cup milk
1/2 cup unflavored yogurt
2 tsp. spicy brown mustard
2 tsp. Worchester sauce
2 tsp. Old Bay seasoning
2 tsp. paprika
2 tsp. salt
1 2-1/2 lb. chicken cut into pieces (Pick of the chick)


1/2 cup all-purpose flour
1/2 cup oatmeal
1 tsp. Old Bay seasoning

1. In a medium-sized bowl combine the milk, yogurt, mustard, Worchester sauce, Old Bay, paprika, and salt. Put the chicken in a large Ziploc bag and carefully pour the marinade mixture over the chicken, into the bag. Seal the bag and refrigerate for 8 hours, turning a few times.

2. After marinating preheat the oven to 450°F. Grease a baking pan large enough to hold the chicken pieces in 1 layer.

3. Place the flour, oatmeal, and Old Bay in a brown paper bag; shake to combine. One piece at a time, place the chicken in the bag and shake until coated. Place the pieces skin side down in the prepared baking dish. Continue until all the pieces are covered in the flour mixture. Bake for 40 to 45 minutes, turning once, until the chicken is golden brown.

I can’t speak highly enough about a product like Old Bay Seasoning. I guess now I’ll have to dig out Mom’s Maryland Crab Cakes recipe to share.
