After my father was forced to retire, due to his health, he became interested in cooking. This was one of his first, and favorite recipes. He was always very proud to serve these to the family, and for good reason.
6 slices bacon
1 lg. onion, chopped (about 1 cup)
3 cans (15 oz. ea.) pork and beans
3 Tbs. brown sugar
2 Tbs. molasses
1 1/2 Tbs. Worcestershire sauce
1 1/2 Tbs. yellow mustard
1 pkg. (16 oz.) diced ham
1. Preheat oven to 350°F.
2. In a large sauté pan, over medium heat, cook bacon until crispy. Remove bacon onto paper towel to drain. Crumble bacon.
3. Cook onion in the same sauté pan in the bacon drippings until tender but not brown. Remove onions to the bacon (on the paper towel) with a slotted spoon to avoid transferring bacon grease.
4. In a large bowl combine all ingredients, including the crumbled bacon and onions; combine. Pour mixture into a 2-quart casserole dish.
5. Bake uncovered, in 350°F oven, for 2 hours.
Dad had a disclaimer at the bottom of this hand written recipe. It was a warning to any who enjoyed a second helping of these delish baked beans. I will leave the details to your imagination.
