After Dad (Murph) retired from his civilian career he became very interested in cooking and baking. Mom and I are left with about a dozen hand written recipes of his from that era. We cherish them deeply.
Here is a very easy, no bake recipe for Key Lime Pie. It’s super yummy, very affordable, and couldn’t be simpler to prepare. Great recipe to make with the kids as well.
1 can (8 oz.) sweetened condensed milk
7 Tbs. (yes seven!) lime concentrate
3 egg whites, beaten
4 Tbs. heavy whipping cream
1 Keebler Ready-Crust graham cracker pie crust
whipped cream (optional for topping)
1. In electric mixer combine the sweetened condensed milk, lime concentrate, egg whites, and heavy whipping cream. Mix on medium-high until mixture begins to thicken.
2. Pour pie filling into the graham cracker pie crust.
3. Freeze overnight (8 hours). Serve with whipped cream toping if desired.
I wonder if back when he was in the Corp he thought he’d ever make Easy No Bake Key Lime Pie?
