Slow Cooker Time: 4 hours
This recipe will produce honey garlic chicken that literally melts in your mouth. The simple mixture of flavors are spot on. This is a recipe that I am asked to make over and over as it seems to please just about everyone around the table.
10 chicken thighs, boneless / skinless
3/4 cup honey
3/4 cup soy sauce
3 Tbs. ketchup
4 cloves garlic, crushed (how to)
1/2 tsp. ground ginger
1 can (20 oz.) pineapple tidbits, drained with juice reserved
2 Tbs. cornstarch
1/4 cup water
prepared white rice
1. Place chicken thighs in your slow cooker.
2. In a medium bowl, combine honey, soy sauce, ketchup, garlic, ginger, and reserved pineapple juice; mix well. Pour mixture over chicken thighs in slow cooker.
3. Cover, and cook 4 hours on HIGH. Stir in pineapple tidbits just before serving.
4. In a small bowl, whisk the cornstarch and water until well combined. Remove thighs from slow cooker. Blend the cornstarch mixture into remaining sauce in the slow cooker to thicken. Serve thighs over rice with sauce over the chicken.
You can add 1 cup of dry white rice before you put the chicken thighs in the crock pot to make this a one crock meal. I alternate between preparing the rice this way and separately.
