Potato salad is a dish made from boiled potatoes, the versions of which vary throughout different regions and countries of the world. Although called a salad, it is generally considered a side dish, as it usually accompanies the main course.  It is a popular menu choice of cooks preparing food for a large number of people, because it is easily made in large quantities, it can be prepared in advance and refrigerated until needed, and requires inexpensive ingredients.  This is my mother’s recipe, and it ROCKS.

Salad:
3 eggs
2 cups cooked potatoes, peeled and cubed
3/4 cup celery, sliced
1/4 cup onion, chopped

Dressing:
1/2 cup mayonnaise (make your own here – easy!)
1 1/2 tsp. cider vinegar
1 tsp. prepared mustard (yellow)
1/t tsp. salt
1/8 tsp. pepper
paprika

1. Place eggs in a medium saucepan; cover with cold water. Bring to a boil. Reduce heat; simmer about 15 minutes. Immediately drain; run cold water over eggs to stop them from additional cooking.

2. Peel eggs. Chop 2 of the eggs; reserve one egg for garnish. In a large bowl, combine chopped eggs, potatoes, celery, and onion.

3. In a small bowl, combine mayonnaise, vinegar, mustard, salt, and pepper; blend well. Spoon dressing mixture over salad; mix well. Cover, refrigerate at least 1 hour or until chilled. I like to chill my potato salad overnight, as it gives time for all the yummy flavors to meld.

4. Just before serving, slice reserved egg. Garnish potato salad with sliced egg; sprinkle with paprika.
