A wonderful mayonnaise blend that goes wonderfully with seafood like Outer Banks Shrimp Burgers or Original Old Bay Crab Cakes.

1 cup mayonnaise
1/4 tsp. salt
1 Tbs. plus 1 tsp. horseradish
1 tsp. lemon juice
1/2 tsp. Old Bay Seasoning

1. In a medium-bowl combine all ingredients; whisk to combine.

2. Refrigerate for at least 1 hour to allow flavors to meld.

Mike’s comments:

I put this mayo blend on more then just seafood. It’s excellent on a grilled burger for a change of pace.

Recipe: Connie’s Cream Cheese Dip

It might just be a chip-dip but I guarantee there will be none left if served at your next shindig!

 

1 pkg. (8 oz.) cream cheese, softened
1/2 cup sour cream
1 Tbs. horseradish
2 tsp. garlic powder
paprika

1. Using an electric mixer combine the cream cheese, sour cream, horseradish and garlic powder; mix until well blended and creamy smooth. Refrigerate for at least 1 hour and dip firms.

2. Transfer to serving bowl and sprinkle top with paprika. Serve with potato chips and pretzels.

A big hit on game night at my house. I usually make a double batch and if the 2nd bowl survives the night I can keep it for up to a week in the fridge.

Recipe: Cream Cheese and Dried Beef Log

This appetizer will have your guests coming back for more, and more.  The combination of the beef, cream cheese, horseradish and chive flavors rocks!

1 pkg. (8 oz.) cream cheese, at room temperature
1/4 cup mayonnaise
1 tsp. prepared horseradish, drained
1/2 cup shredded Swiss cheese
2 oz. dried beef, finely chopped
1 Tbs. pimientos (can or jar), drained and chopped
1/2 cup chives or green onion tops, finely chopped

1. In a small bowl, with an electric mixer on high, beat the cream cheese, mayonnaise, and horseradish until creamy. Stir in Swiss cheese, dried beef, and pimientos.

2. Shape the mixture into an 8-inch-long log. Wrap log in plastic wrap and refrigerate for at least 2 hours (will keep for 2 days).

3. Spread the chives on wax paper. Unwrap the log and carefully roll it in the chives, coating it completely. Rewrap in plastic wrap and refrigerate until time to serve. Serve the cheese log with your favorite crackers or melba toast slices.
